Where to start

Each series here has its own listening order. The First Law is the longest, at 7 books. The original trilogy first, then the three standalones in publication order, then the Age of Madness trilogy, which has its own listening order on this site. The standalones are genuinely standalone but spoil the trilogy's ending, so do not start there. Sharp Ends, a collection of short stories set in the same world, came out after Red Country and is listed last; leave it until you have heard the standalones.
